When I tasted wagashi for the first time, the profound sweetness struck my heart. After understanding the historical origins, I had deep doubts as to why this wisdom from the Tang Dynasty was carried forward in Japan and passed down from generation to generation to this day. After several years of studying in a foreign country, I finally understood the reason why wagashi is so amazing. It not only integrates tea, flowers, and calligraphy, but also contains the mystery of age and the grace of humanistic spirit. The distant civilization has been refined over the years, showing stunning magnificence, which is touching and intoxicating to me.
When I first tasted wagashi, it was indeed sweet and refreshing, but after drinking it with tea, I found that tea can bring out the unique temperament of wagashi and present a deep flavor. Later, I tried it with oolong, sencha, matcha, black tea, barley tea, and even coffee. Paired with wine, the warm and fragrant taste still fills the lips and teeth, leaving you with a sweet taste. Sometimes I often wonder why wagashi comes from Zen. Perhaps it is because of its exquisiteness and uniqueness, and it also directly points to the human heart like its profound meaning.
