Great virtue is like water じょうぜんみずのごとし Jozenjosui
The creative inspiration comes from the philosophy of life in Lao Tzu's "Tao Te Ching" (Classic of the Way and its Virtue) , "True goodness is like water, in that it benefits everything and harms nothing. Like water it ever seeks the lowest place, the place that all others avoid. It is closely kin to the Dao."
Lao Tzu uses water as a metaphor for virtuous people, which is akin to the characteristics of water:
1. Nourish all things and benefit all living beings;
2. Submissive and invisible, does not compete with others;
3. Flows downwards and remains humble.
Echoing the profound and introverted nature of Japanese confectionery and the value of harmony, like rain and dew nourishing all things, streams flowing endlessly, and the sea embracing all kinds of rivers. Through the skillful use of kingyokukan being as crystal clear as water, with ever-changing possibilities, it gave me a sudden stroke of enlightenment at a moment when my inspiration was about to run out, and "Jozenjosui" was born.

Jozenjosui Kingyokukan has been the focus of public attention since the release of teacher Emily's "Wagashi Magic Manual".
