Kansai Sakuramochi / Domyoji Sakuramochi
Kansai-style sakura cakes are made using "Dooming Temple flour", hence the name.
Daoming Temple flour, invented by Daoming Temple in Osaka, is made by steaming glutinous rice, then drying and grinding it to preserve it as a dry product. It was the dry food given to samurai to carry with them during the Japanese Warring States Period. It could be used as a main meal by simply adding hot water to reconstitute it.
The reason why it changed from dry rice to sakuramochi is that the Kanto Chomeiji sakuramochi was very popular at that time, so the Japanese confectionery shops in Kansai used Domyoji flour instead of fried cake skin to experiment. The taste is more chewy and delicious than the Chomeiji sakuramochi, and it is more convenient and simple to make. It can be said that they have successfully challenged the Kanto Chomeiji sakuramochi!
In modern times, it even surpassed the others. When people talk about sakura mochi, they will think of Domyoji Sakura mochi. West of Nagoya, you will almost only see Domyoji Sakura mochi. When Japanese people talk about Domyoji mochi, they mean sakura mochi. This shows that the cultural war between Kanto and Kansai has never stopped. I personally think it is a healthy competition, and it reflects the Japanese nation's endless pursuit of perfection!

Sakura Leaves
The carefully selected young leaves of Oshima cherry blossoms with little hair are very soft and easy to eat. During the salting process, a special aromatic ingredient "coumarin" is produced, so it has a unique and rich aroma. It has the effects of preventing edema, anti-aging, antibacterial, and helping blood circulation. Eaten with sakura cake, it is salty and sweet without being greasy, and it has a natural sweet aftertaste, leaving a lingering fragrance in the mouth. It is a flavor limited to the cherry blossom season!
Hinamatsuri and Sakuramochi
In addition to Hishimochi, Sakuramochi is also one of the representative fruits of the Girls' Festival.
