Snow Rabbit ゆきだまうさぎ Yukidama Usagi

 

Rabbit-shaped wagashi is unique in every Japanese store.

Toukaya's is no exception. The red-eared rabbit is Emily's original creation;

Thin and tender outer skin, with an exclusive peanut filling,

Soft and chewy in the mouth, a mellow and rich aroma overflows between the teeth.

Peanuts harmonize the spleen and stomach, moisten the lungs and resolve phlegm, nourish and regulate qi (vital energy).

Uiro ういろう

Made of rice, uiro is a soft and elastic, slightly chewy mochi. It was originally the name of a rank of officials in Tang Dynasty China. Later, Japan had a popular wagashi made with brown sugar, which looked similar to a medicine with the same name, "Tou Ding Xiang" (over the top fragrance), so this name became widely spread.

In the Japanese world, rabbits represent good symbolic meanings. Their strong reproductive ability signifies that the family will have many descendants; their excellent jumping ability and fast footsteps symbolize great ambitions and can quickly bring good luck and blessings to the family.

 

Teacher Emily, founder and master craftman at Toukaya, loves white rabbits. When she was working at a 70-year-old Wagashi shop in Japan, it happened to be named Usagiya (Rabbit House) . After returning to Taiwan in 2006, Emily started her business and came up with the idea of Yukidama Usagi. The red-eared snow rabbit became an original creation of Toukaya. Its innocent and cute appearance makes people sympathize with them. The peanut filling is made specially with Hualien "Meihao Peanuts" chunky peanut butter, giving it a delicate texture and good palatability, The fragrance of peanuts fills the lips and teeth. It is an excellent dessert to accompany tea.
